The stunning Honyaki Gyuto is hand forged by top blacksmith to create a truly special knife. The blade is forged from White carbon steel also known as Shirogami. Forged to a very hard Rockwell hardness of 64-65.
The Honyaki knife has extremely long edge retention and it is very sharp.
